1 roma tomato
1/4 cup of zucchini
1/4 cup of smoked salmon
1 tsp olive oil
Pepper Directions: Slice the tomato and roast in the oven with a thin layer of olive oil; add garlic powder, salt and pepper to taste. Slice and grill the zucchini with olive oil and a light sprinkling of salt and pepper. Next, cook both eggs as an omelet and add the salmon, tomatoes and zucchini before folding over. Healthy Eats!
